Method
I created a tincture with the toasted sesame in order to skim off the fat that collects from the seeds. Mash at 50°C for 10 minutes, step up to 65°C for 50 minutes, and mash out at 75°C for 10 minutes. Ferment at 12°C for 14 days, let free rise to 17°C for a diacetyl rest for 3 days, and cold crash. Enjoy with a friend or two and never stop talking about the ongoing genocide in Palestine.
